Desperate for Help! Graduation party activity ideas?

I am throwing a high school graduation party for my sister and we have all the details worked out except for an activity. She doesn't want to have just a dj she wants there to be something to do. We were trying to rent something inflatable like boxing or jousting but that has fallen through due to availability. We are looking for something to make it memorable and different. Any ideas are appreciated!
Also... there will be no alcohol at this party...
There isn't alcohol for several reasons. The first and most important is that my sister and most of her friends do not drink. The second is that the venue does not allow alcohol to be served.

The original theme and what we are still trying to work with is a carnival/fair kind of theme.
